Nadia Voss opened Sill in the spring of 2021, in a former auto body shop on SE 34th. The sourdough starter is eight years old. The flour comes from Camas Country Mill in Eugene — stone-ground, whole-grain when possible. She shapes everything before dawn.
The name is for the light. There is a long south-facing window above the bench, and at 5am before anyone arrives, the flour sits in it like something worth paying attention to.
